Interesting, I met a woman recently whose Vit D supplements weren’t doing anything since she was taking them on an empty stomach. Then she started taking them with fat-containing food and her levels normalized.

Is beta carotene fat soluble like vitamin A? It occurs to me that when I drink carrot juice, it is usually by itself (without oil) and I wonder if I am not absorbing the vitamin that way.

beta-carotene is fat soluble and you would probably absorb more by adding some fat to your carrot juice.

In a meal consisting of whole grains, beans and lots of vegetables, but no added oils, seeds or nuts, is the fat naturally contained in the grains and beans adequate to ensure absorption of the fat soluble vitamins in the meal?
(We’ve got plenty of seeds, nuts and some olive oil in our diet, but they tend to be more in our dinner, breakfast or snacks, and often our main meal of the day does not contain them. Wondering if this is a mistake, as far as absorbing the fat soluble vitamins in the meal)

I don’t know the answer to that. beta-carotene is the main fat-soluble vitamin vegans need to be concerned about absorbing enough of from meals and I try to add some extra fat to meals with beta-carotene, but I don’t think anyone knows how much fat is needed to absorb enough.
